On the south eastern part of the island, an environment of wild beauty surrounds Le Toiny, considered by many a small haven of peace. A Relais & Châteaux establishment, serving a delicate and refined Mediterranean-inspired cuisine with notes of Caribbean freshness, which represents perfectly the mixture between wilderness and serenity that Le Toiny experience delivers. The menu, formed by a selection of fresh fish, meats and seafood, as well as starters, sides and desserts inspired from the fusion of these two lively cuisines attests Le Toiny’s excellence, and certainly why it is considered one of St Barthélémy’s most prestigious establishments. If you’re in the mood for something more casual, Le Toiny recently opened a beach club where you can sip one of their inventive cocktails and get a bite to eat while staring at the ocean’s beauty.
Founded in 1992 and recently acquired, in 2015, by Charlie and Mandie Vere Nicoll, Le Toiny is one of the two Relais & Châteaux establishments in St Barth. This guarantee of quality has made Le Toiny one of the meeting places of those seeking a peaceful holiday in a spectacular setting, away from busier parts of the island. The hotel has undergone major refurbishment in 2015, rejuvenating its main structures and giving a fresh character to its décor. The restaurant was redecorated by Lady Bee Osborn, in a ‘seaside chic’ fashion, where neutral color gradients, petrified wood, mother-of-pearl and silky fabric blend in the surrounding landscape.
