L’Esprit is currently run by Jean-Claude Dufour, who has been a chef in St Barth for the past 19 years, notably to the infamous Eden Rock hotel. This talented epicurean has managed to use his traditional French training to create a fresh, elegant and extremely reliable gastronomic experience, which we are sure you will visit over and over again.
